Marukome: About Miso
Miso is a rich, salty condiment that embodies the essence of Japanese cooking. Traditionally, Japanese begin their day with a steaming bowl of homemade Miso soup. They also use Miso to flavor and season a wide range of foods in meals throughout the day.
Miso soup consumed by tens of millions of Japanese for breakfast and often for lunch and dinner, too is almost always made with dashi (a stock made from dried bonito and kelp) as a base. But it's also excellent made with other stocks, such as one made from chicken stock and fennel, which can really bring out the best in Miso.
Many middle-aged Japanese are transported back to their childhood at the mention of Miso soup. There is an old Japanese saying that is similar to an American saying: "A bowl of Miso soup every day keeps the doctor away."
