Miso Smashed Potatoes

Marukome Recipe for miso smashed potatoes

Ingredients

  • 2 lbs. red potatoes, fingerling potatoes or baby gourmet potatoes
  • 1 tbsp. Miso & Easy
  • 1 tbsp. olive oil
  • good quality sea salt & freshly ground black pepper

Directions

Step One

Heat oven to 375ºF. In a baking sheet, toss the potatoes with the Miso & Easy and olive oil. Roast the potatoes for 20-30 minutes or until easily pierced with a fork.The larger the potato, the longer it will take.

Step Two

Use a potato masher or a meat tenderizer to gently flatten each potato.

Step Three

Move the oven rack to the upper part of the oven. Turn heat to broil. Broil the potatoes for 5 minutes or until nice and crisp on top. Season with sea salt and freshly ground black pepper.
