• 10 oz. Macaroni
  • ¼ Cup Butter
  • ¾ Cup Flour
  • 3 ¾ Cup Milk
  • 4 Tablespoons White Miso
  • 1 Egg Yolk
  • 1 ¼ Cup Gruyere Cheese, grated
  • 4 Tablespoons Chives


Step One

Preheat oven to 350ºF

Step Two

Cook the pasta al dente according package instructions.

Step Three

Melt butter on low heat in a small pot. When it starts foaming, add flour and cook for one minute until it begins to bubble, stirring constantly.

Step Four

Remove from heat and slowly add milk while stirring. Stir on low heat until the mixture begins to thicken.

Step Five

Remove from heat, add the miso and egg yolk and stir.

Step Six

Let the mixture sit for 5 minutes, then add 1 cup grated cheese and chives and stir until cheese has melted.

Step Seven

Add the cheese mixture to pasta and stir well.

Step Eight

Butter the sides of a baking dish, add the pasta and remaining cheese on top.

Bake in the oven for 35 minutes until the top is golden brown.
