Tenshinhan

Tenshinhan – Japanese Crab Omelette Rice with Miso Sauce. Tenshinhan is a Japanese-style Chinese dish featuring fluffy eggs served over steamed rice and finished with a savory-sweet sauce. This version incorporates miso into the sauce, adding extra umami and depth while keeping the dish comforting and well balanced.

Ingredients

(Serves 1)
  • 1 lb. (about 1″thickness) boneless beef
  • top round or family steak for marinade
  • 1 bowl steamed rice
  • 3 eggs
  • 1 tbsp. cooking oil
  • 1 tbsp. oyster sauce
  • 1 tbsp. green onions, chopped
  • 1 tbsp. imitation crab meat (surimi)
  • 1 tbsp. water
  • 1 tbsp. soy sauce
  • 1 tbsp. cooking wine
  • 1 tbsp. vinegar
  • 1 tbsp. sugar
  • 1 tbsp. Miso & Easy
  • 1 tsp. black pepper
  • 1 tsp. cornstarch + 1 tbsp water (slurry)

Directions

  1. Make the sauce: In a small pan, combine water, soy sauce, vinegar, and sugar. Bring to a gentle simmer. Stir in cornstarch slurry until slightly thickened. Remove from heat and whisk in miso. Season with black pepper.
  2. Prepare the eggs: Beat the eggs and mix in the imitation crab meat.
  3. Cook the eggs: Heat oil in a pan, pour in the egg-crab mixture, and gently stir to make soft, fluffy curds.
  4. Assemble: Place eggs over steamed rice. Pour miso sauce on top. Garnish with chopped green onions. Serve hot!
