Tofu with Miso and Blue Cheese Dressing

TOFU WITH MISO AND BLUE CHEESE DRESSING

Miso may seem like an unusual addition clasic tomato and basil, Miso & Easy adds a subtle umami that mellows the blue cheese and enhances the overall flavor.

Ingredients

  • 14 oz. (315g) Tofu, Medium firm
  • 3 oz. (85g) Blue Cheese, such as Roquefort or Gorgonzola
  • 1 tomato, cut into bite-size pieces
  • 1 bunch fresh basil

For Dressing

  • 2 Tbsp. Miso & Easy
  • 2 Tbsp. pesto sauce

Directions

  • 01 Mix all dressing ingredients in a bowl. Set aside.
  • 02 Wrap tofu with a paper towel to remove any excess water. Tear into bite-size pieces by hand. Place onto a serving plate.
  • 03 Crumble Blue Cheese by hand over tofu. Add tomato to the plate, and top with basil leaves. Drizzle dressing over and serve immediately.
