Tofu with Miso and Blue Cheese Dressing
Tomatoes, Basil, and Miso
You might think it a strange combo to bring miso into the classic tomato and basil duo. However, Miso & Easy adds umami to this recipe in subtle but apparent ways, mellowing the blue cheese and carrying out fuller flavors in the tomato basil.
- 14 oz. (315g) Tofu, Medium firm
- 3 oz. (85g) Blue Cheese, such as Roquefort or Gorgonzola
- 1 tomato, cut into bite-size pieces
- 1 bunch fresh basil
- 2 Tbsp. Miso & Easy
- 2 Tbsp. pesto sauce
Mix all dressing ingredients in a bowl. Set aside.
Wrap tofu with a paper towel to remove any excess water. Tear into bite-size pieces by hand. Place onto a serving plate.
Crumble Blue Cheese by hand over tofu. Add tomato to the plate, and top with basil leaves. Drizzle dressing over and serve immediately.
