CRISPY SWEET POTATOES WITH MISO BUTTER CARAMEL

Ingredients

(2 servings)
  • 2 large sweet potatoes, diced
  • 2 tbsp olive oil
  • salt, pepper to taste
    Sprinkle cornstarch evenly

[Miso Caramel]

  • 4 tbs butter
  • 1 tbs honey
  • 1 tbs miso paste
  • 1 tbs garlic
  • 1 tbs shallot

Directions

  • 01 Start by dicing the sweet potato and placing the cubes in a bowl. Add olive oil, salt, pepper, and cornstarch. Toss everything together to ensure the sweet potato is evenly coated.
  • 02 Spread the sweet potato cubes in a single layer on a heat-safe tray. Bake in the oven at 400°F (200°C) for 25 minutes.
  • 03 In a separate pan, combine all the ingredients for the miso caramel.
  • 04 Once the sweet potatoes are cooked, transfer them to the pan with the miso caramel and toss to coat thoroughly.
  • 05 Finally, sprinkle with parsley and serve.
