The sushi market in the United States has become the largest in the world, surpassing Japan. However, there is a significant shortage of sushi chefs worldwide.
The Sushi Chef Institute offers an opportunity to learn advanced techniques in a high-demand environment. It is led by Chef Andy Matsuda, who has been appointed by the Ministry of Agriculture, Forestry, and Fisheries as a "Goodwill Ambassador for the Promotion of Japanese Food."
Last week, I attended an event at the School, where I could try clam miso soup made with our miso. It was wonderful to witness the students' passion for making sushi.
