This summer, Marukome is proud to partner with Odo, New York City’s Michelin two-star Japanese restaurant, and THE GALLERY by Odo to present a one-of-a-kind cultural and culinary exhibition celebrating the tradition of Japanese fermentation.

From June 6 through September 4, 2026, visitors are invited to explore the world of miso and fermentation through three unique experiences:

Enjoy exclusive dishes inspired by miso and fermentation, specially created by the culinary team at Odo.

🏺 Discover

Explore rare artifacts from Marukome’s 170-year history, including century-old wooden fermentation barrels, traditional brewing tools, and historical materials that showcase the craftsmanship behind Japanese fermentation.

💡 Learn

Join interactive seminars led by Shuta Aoki, fifth-generation leader of Marukome, and gain insight into the history, science, and artistry of miso making and fermentation.

More than an exhibition or a dining collaboration, this experience offers a rare opportunity to discover how fermentation has shaped Japanese food culture for generations—and why it continues to inspire chefs, artisans, and food lovers around the world today.
