Fig Salad with Shio Koji Yogurt Dressing

A dressing combining two fermented foods: Shio Koji and yogurt. Enjoy plenty of healthy salads!

Ingredients

(Serves 2)

2 oz. arugula

3 figs

1.5 oz. cottage cheese

chopped walnuts, to taste

balsamic vinegar, to taste

Dressing

2 tsp. Shio Koji

3 tbsp. plain yogurt

1 tbsp. olive oil

white pepper to taste

Directions

1:

Mix the [Dressing] ingredients together and toss with the arugula. Arrange on a plate.

2:

Cut the figs into bite-sized pieces and place them on the plate alongside the cottage cheese, walnuts and balsamic vinegar.
