1 lb. pork belly
1.6 oz. Shio Koji
(approximately 10% of the meat's weight)
1 orange
8 asparagus spears
Cut the orange into three slices, each 1/2 inch thick. Squeeze the juice from the remaining portion of the orange into a bowl.
In a plastic bag, combine the Shio Koji and the orange juice. Add the thick-cut pork belly into the bag and massage the mixture to ensure the pork is fully coated. Remove the air from the bag, seal it, and marinate in the refrigerator for at least 30 minutes.
Preheat your oven to 392°F (200°C). Arrange the asparagus, orange slices, and marinated pork on a baking sheet lined with parchment paper. Bake for 20 to 30 minutes, or until the pork is cooked through. Enjoy your meal!
