Marinated Sashimi Salmon with Shio Koji

(Serves 2)
5 oz. salmon (sashimi-grade)
1/2 onion
3 lemon slices
herbs of your choice to taste
3 tbsp. Shio Koji
2 tbsp. lemon juice
2 tbsp. olive oil
Thinly slice the onion.
Combine the onion and the dressing ingredients in a plastic bag. Massage the bag to mix the ingredients well. Next, add the sashimi-grade salmon and the lemon slices, and gently toss everything together. Remove the air from the bag, seal it, and let it marinate for 2 hours to overnight.
Remove the salmon from the bag and cut it into bite-sized pieces. Arrange them on a plate with the marinated onion and lemon slices. Garnish with your favorite herbs.
