(Serves 2)
0.7 lb. edamame (shelled)
1/2 onion, thinly sliced
1 clove of garlic, chopped
2 tsp. olive oil
Herbs of your choice, for garnish
4 tbsp. water
5 oz. milk or soy milk
1 tbsp. Shio Koji
1 tbsp. maple syrup
Thaw the edamame and shell them, setting aside a small amount for garnish. Thinly slice the onion.
In a pan, sauté the onion, garlic, and edamame in olive oil until the onion becomes translucent.
Add the water, milk (or soy milk), Shio Koji, and maple syrup to the mixture. Simmer until it reaches a gentle boil.
Remove from heat and blend the soup with a hand blender until smooth. Transfer to a serving bowl and top with the reserved edamame and your choice of herbs. Enjoy your delicious Shio Koji Edamame Soup!
