Sweet Potato Miso Soup
SWEET POTATO MISO SOUP
Directions
- 01 Thoroughly wash the sweet potato, slice and soak in water. Slice the onions as well.
- 02 Place the butter in a pot, put on medium heat, add onions and sweet potato in this order, and stir-fry.
- 03 When the vegetables are tender, add water and simmer for 20 minutes on low heat.
- 04 Turn off the heat and add miso paste. Using a hand mixer, turn the soup into a paste and add heavy cream, salt and pepper and cook on low heat. Turn off the heat just before the pot boils.
