Chairman Mr. Aoki lectured at Georgetown University

On May 10th, 2024, our chairman, Mr. Aoki, was delighted to lecture “Miso Mastery- A Journey from Tradition to Innovation-” at Georgetown University.
This conference was planned as part of a biomedical graduate school education. With a growing body of research tying microbiome health to overall well-being, Ms.Tomoko Steen, a microbiome researcher, wanted to foster discussion among experts from different areas. The session on fermented foods especially attracted particular attention at the conference.
Other speakers included some of the biggest names in the fermentation world, including Rich Shih, the author of Koji Alchemy.
The content of Mr. Aoki’s talk covered basic knowledge about miso, including its history, culture, fermentation, and research.
This content was both educational and enjoyable for the audience.
The significance of Japanese "fermentation" is expected to attract more and more attention in the future as it will have an impact on American society, where obesity and lifestyle-related diseases are rampant.
